Ingredients
- 2 cups dried split peas
- 1 piece ham bone or smoked ham hock
- 1 large yellow onion, diced
- 2 stalks celery stalks, diced
- 1 large carrot, diced
- 8 cups chicken or vegetable broth
- 1 cup smoked ham, diced (optional)
- 2 leaves bay leaf
- 2 sprigs fresh thyme
- 1 to taste salt and black pepper
- 1 tablespoon olive oil

Rinse split peas under cold water and pick through for debris.

Dice onion, celery, and carrot into uniform small pieces.

Heat olive oil in a large pot over medium heat. Add onion, celery, and carrot; sauté for 5 minutes until softened.

Add split peas, ham bone, broth, bay leaves, and thyme. Bring to a boil, then reduce heat and simmer for 30-35 minutes, stirring occasionally.

Remove ham bone and bay leaves. If using whole ham, shred any meat from the bone and return to pot. Stir in diced ham if using.

For a smoother soup, use an immersion blender to partially puree (or leave chunky, as preferred). Season with salt and pepper.

Simmer for 2-3 minutes more, adjust seasoning, and serve hot.
