- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp paprika

Preheat oven to 425°F (220°C). Insert a wooden skewer lengthwise through the center of the 1 large potato, pushing all the way through.

Using a sharp knife, cut the potato at a slight angle, rotating the skewer as you go, to create a continuous spiral. Aim for thin, even slices, about 1/8 inch thick.

Gently push the spiral down along the skewer to separate the slices slightly, creating a spring-like shape. Pat dry with paper towels.

Brush the spiral potato all over with the 2 tbsp olive oil, then sprinkle with the 0.5 tsp salt, 0.25 tsp black pepper, and 0.5 tsp paprika.

Place the skewer on a baking sheet lined with parchment paper. Bake for 35-40 minutes, until the potato is golden brown and crispy on the edges, and a fork easily pierces the center.
