Spinach Pasta with Parmesan

Ingredients
- 8 oz pappardelle pasta
- 6 oz fresh spinach
- 1 cup Parmesan cheese
- 2 cloves garlic
- 2 tbsp olive oil
- 2 tbsp butter
- ½ tsp black pepper
- 1 tsp salt

Bring a large pot of salted water to a boil. Add the 8 oz pappardelle and cook until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.

While the pasta cooks, heat the 2 tbsp olive oil and 2 tbsp butter in a large skillet over medium heat. Add the 2 minced garlic cloves and cook until fragrant, about 1 minute.

Add the 6 oz fresh spinach to the skillet in handfuls, stirring until wilted, about 2-3 minutes. Season with 0.5 tsp black pepper and 1 tsp salt.

Add the drained pasta to the skillet with the spinach. Pour in 0.5 cup of the reserved pasta water and toss to combine.

Remove the skillet from heat and sprinkle in the 1 cup grated Parmesan cheese. Toss quickly until the cheese melts into a creamy sauce, adding more pasta water if needed.
