Ingredients

  • 8 whole large eggs
  • 3 cups fresh spinach
  • ¾ cup feta cheese, crumbled
  • ½ medium onion, diced
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

    Preheat broiler to high. Crack eggs into a bowl and whisk until no streaks remain.

    Add salt and pepper to eggs. Stir in feta cheese and spinach until combined.

    Heat oil in a 10-inch oven-safe skillet over medium-high until shimmering.

    Add diced onion and sauté, stirring, until softened and edges turn golden, ~3 minutes.

    Pour egg mixture into skillet and stir gently for 30 seconds to distribute spinach.

    Cook on stovetop without stirring until edges set but center still jiggles, ~4 minutes.

    Transfer skillet to broiler and broil until top is golden and puffed, ~2 minutes.
