Crispy Spinach & Cheese Gozleme

Ingredients
- 1.5 cups all-purpose flour
- ¾ cup water, warm
- 2 cups fresh spinach, packed
- ¾ cup feta cheese, crumbled
- 2 cloves garlic, minced
- ½ lemon lemon, juiced
- ¼ tsp red pepper flakes

Mix flour, warm water, and a pinch of salt in a bowl until shaggy. Knead for 2 minutes until soft and slightly sticky.

Heat 1 tbsp oil in a large skillet over medium. Add garlic and cook 30 seconds until fragrant.

Add spinach in batches, stirring until wilted, ~2 minutes. Remove from heat and stir in feta, lemon juice, and red pepper flakes.

Divide dough in half. On a flour-dusted surface, stretch one half into a thin 8-inch round, rotating as you go.

Spread half the spinach-feta filling on one half of the round, fold dough over to seal, and press edges gently.

Wipe skillet clean, heat 1 tbsp oil over medium-high until shimmering. Slide gozleme in and cook 2–3 minutes per side until golden and crispy. Repeat with remaining dough and filling.
