Ingredients
- 6 large eggs
- 2 cups fresh spinach
- ½ cup cheddar cheese, shredded
- 1 tbsp olive oil
- ¼ tsp salt
- ⅛ tsp black pepper

Crack eggs into a bowl. Whisk until pale and frothy, about 30 seconds.

Heat oil in a 10-inch nonstick skillet over medium heat until it shimmers.
