Ingredients

  • 6 large eggs
  • 2 cups fresh spinach
  • ½ cup cheddar cheese, shredded
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ⅛ tsp black pepper

Instructions

    Crack eggs into a bowl. Whisk until pale and frothy, about 30 seconds.

    Heat oil in a 10-inch nonstick skillet over medium heat until it shimmers.

    Add spinach and cook, stirring, until wilted and any liquid has evaporated, 1–2 minutes.

    Spread spinach evenly across the skillet. Pour whisked eggs over top.

    Sprinkle cheese and salt and pepper over the eggs. Cook undisturbed for 5–6 minutes until edges are set but center still jiggles slightly.

    Slide frittata onto a plate or cut into wedges and serve warm.
