Ingredients

  • 3 tablespoons Japanese mayonnaise
  • 1 tablespoon sriracha
  • ½ teaspoon lime juice
  • 6 ounces sushi-grade ahi tuna
  • 2 cups sushi rice (prepared)
  • 2 sheets nori sheets
  • 2 tablespoons sesame seeds
  • 2 tablespoons green onion, thinly sliced
  • ½ teaspoon wasabi
  • 2 tablespoons soy sauce
  • 2 tablespoons pickled ginger
  • 1 tablespoon extra sesame seeds

Instructions

    Combine mayonnaise, sriracha, and lime juice in a small bowl to make spicy mayo. Set aside.

    Dice the sushi-grade tuna into small cubes and fold into the spicy mayo with green onion until evenly coated.

    Place a nori sheet shiny-side down on a bamboo sushi mat, with the long edge closest to you.

    Spread 0.5 cup of sushi rice evenly across the nori, leaving a 0.5-inch border at the top.

    Sprinkle sesame seeds over the rice and press lightly.

    Place half the spicy tuna mixture in a line across the middle of the rice.

    Using the mat, roll tightly toward the top edge, sealing the seam with a wet finger.

    Slice the roll into 8 pieces using a sharp, wet knife with a single smooth motion per cut.

    Repeat with remaining ingredients to make a second roll.

    Arrange rolls on a plate with a small dish of soy sauce, pickled ginger, and extra sesame seeds on the side.
