Ingredients

  • 2 cups sushi rice, cooked and still warm
  • 8 oz sushi-grade tuna, diced into 0.5-inch cubes
  • 3 tbsp Japanese mayonnaise (Kewpie)
  • 1 tbsp soy sauce
  • 2 stalks scallions, thinly sliced
  • 1 tbsp sesame seeds (white or black)

    Heat oil in a skillet over high until it shimmers, about 60 seconds.

    Sear tuna 30 seconds per side without stirring — surface should look just caramelized, interior stays raw.

    Transfer tuna to a bowl and fold in mayo, soy sauce, and half the scallions until coated.

    Wet your hands lightly with water. Scoop 0.5 cup warm rice into your palm and press a thumb divot in the center.

    Fill the divot with 1 tbsp tuna mixture, then cover with another 0.25 cup rice and squeeze gently into a triangle.

    Place onigiri on a plate, sprinkle with sesame and remaining scallions, then serve immediately.
