Ingredients
- 1 lb calamari (squid), cleaned and sliced into rings
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 can (15 oz) crushed tomatoes
- ½ tsp red pepper flakes
- 2 tbsp fresh parsley, chopped
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- 1
Heat 2 tbsp olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and 0.5 tsp red pepper flakes; cook until fragrant, about 1 minute.
- 2
Pour in 1 can crushed tomatoes, 0.5 tsp salt, and 0.25 tsp black pepper. Stir and bring to a simmer; cook for 5 minutes until slightly thickened.
- 3
Add 1 lb calamari rings to the sauce. Stir to coat, then cover and simmer gently until squid is just tender, about 5-7 minutes. Do not overcook or it will become rubbery.
- 4
Remove from heat and stir in 2 tbsp chopped fresh parsley. Taste and adjust seasoning with more salt or pepper if needed.
- 5
Serve hot, spooned over pasta, polenta, or with crusty bread to soak up the sauce.
