Ingredients

  • ¾ cup natural peanut butter
  • 3 tbsp lime juice
  • 3 tbsp soy sauce
  • 2 tbsp chili-garlic sauce (or sriracha)
  • 1 tbsp honey
  • ¼ cup warm water
  • 1 lb sliced pork belly, warmed
  • 1 head butter lettuce or Boston lettuce
  • 1 cup fresh herbs (cilantro, mint, and basil, chopped)

Instructions

    Add peanut butter, lime juice, soy sauce, chili-garlic sauce, and honey to a bowl.

    Whisk until combined, then slowly add warm water 1 tbsp at a time, whisking until sauce reaches a drizzle consistency.

    Taste and adjust: add more lime for tang, chili sauce for heat, or water for thinness.

    Arrange warm pork belly, lettuce leaves, herbs, and the peanut sauce on a platter for communal wrapping.
