- 8 oz mushrooms
- 3 tbsp soy sauce
- 2 tbsp chili garlic sauce
- 1 tbsp honey
- 2 tbsp vegetable oil
- 3 stalks green onions
- 2 cups lettuce

Slice the 1.5 lb chicken breast into bite-sized pieces and the 8 oz mushrooms into quarters. In a small bowl, mix 3 tbsp soy sauce, 2 tbsp chili garlic sauce, and 1 tbsp honey.

Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook until browned on all sides, about 5-7 minutes.

Add the mushrooms and stir-fry for 3-4 minutes until they start to soften and release their moisture.

Pour the sauce over the chicken and mushrooms. Stir to coat and let it bubble until the sauce thickens and clings to the chicken, about 2-3 minutes.

Slice the 3 green onions thinly. Serve the stir-fry over a bed of 2 cups lettuce and sprinkle with the green onions.
