Ingredients

  • 12 count large shrimp, peeled and deveined
  • ¾ cup all-purpose flour
  • ¾ cup cornstarch
  • 2 cups sushi rice, cooked and seasoned
  • 2 count nori sheets
  • ¼ cup mayonnaise
  • 2 tbsp sriracha
  • 2 cups neutral oil for frying

Instructions

    Mix flour, cornstarch, cold water, and a pinch of salt until lumpy. Pat shrimp dry.

    Heat oil in a deep skillet to 350°F. Dip shrimp in batter and fry until golden, 2 minutes.

    Drain fried shrimp on paper towels. Mix mayo and sriracha in a small bowl.

    Lay nori shiny-side down. Spread sushi rice in a thin layer, leaving a 0.5-inch border.

    Place 6 shrimp in a line across the rice. Brush the nori edge with water.
