Spicy Shrimp Mie Aceh

Ingredients

  • 12 oz medium shrimp, peeled and deveined
  • 8 oz fresh egg noodles or ramen noodles
  • 1 tbsp ginger, minced
  • 1 whole red chili (Thai bird or jalapeño), sliced
  • 2 cups chicken or seafood broth
  • 3 tbsp fried shallots
  • 1 whole fresh scallion, sliced

Instructions

    Boil salted water in a large skillet over high heat. Add noodles and cook until just tender, about 3 minutes. Drain and set aside.

    Return skillet to medium-high heat. Add 1 tbsp oil, then sauté ginger and chili for 30 seconds until fragrant.

    Add shrimp and cook, stirring occasionally, until pink and cooked through, about 3 minutes.

    Pour in broth and return to a boil. Add noodles back to the skillet and toss to combine, 1 minute.

    Transfer to bowls. Top with fried shallots and sliced scallion. Serve immediately.
