Ingredients

  • 2 whole cucumber (about 2 medium)
  • 2 tbsp gochujang (Korean red chili paste)
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp sesame seeds
  • 2 whole scallions (thinly sliced)

Instructions

    Halve cucumbers lengthwise, then cut crosswise into thin half-moons about 1/4 inch thick.

    In a small bowl, whisk gochujang, sesame oil, rice vinegar, and 1 tbsp water until smooth.

    Pour dressing over cucumbers and toss until every piece is coated.

    Sprinkle sesame seeds and scallions on top and serve immediately or chill up to 2 hours.
