Ingredients
- 1 lb Italian sausage, hot or sweet
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 28-oz can canned crushed tomatoes
- 4 cups chicken broth
- 4 cups kale, stemmed and chopped
- ½ tsp red pepper flakes
- 1 pinch salt and black pepper to taste

Heat olive oil in a large pot over medium-high. Add sausage and cook, breaking up with a spoon, until no pink remains, ~6 minutes.

Add onion and cook, stirring, until softened and translucent, about 4 minutes.

Add garlic and red pepper flakes. Stir constantly until fragrant, 30 seconds.
