Spicy Sausage and Kale Soup

Ingredients

  • 1 lb Italian sausage, hot or sweet
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 28-oz can canned crushed tomatoes
  • 4 cups chicken broth
  • 4 cups kale, stemmed and chopped
  • ½ tsp red pepper flakes
  • 1 pinch salt and black pepper to taste

Instructions

    Heat olive oil in a large pot over medium-high. Add sausage and cook, breaking up with a spoon, until no pink remains, ~6 minutes.

    Add onion and cook, stirring, until softened and translucent, about 4 minutes.

    Add garlic and red pepper flakes. Stir constantly until fragrant, 30 seconds.

    Pour in crushed tomatoes and broth. Bring to a simmer and cook 10 minutes.

    Add kale and stir until wilted, about 2 minutes. Season with salt and pepper.

    Serve hot in bowls.
