Ingredients

  • 1.5 lb pork shoulder
  • 1 red bell pepper
  • 1 red onion
  • 1 cucumber
  • 3 tbsp soy sauce
  • 2 tbsp gochujang
  • 1 tbsp honey
  • 1 tbsp sesame seeds

Instructions

    Cut the 1.5 lb pork shoulder into 1-inch cubes. In a bowl, mix 3 tbsp soy sauce, 2 tbsp gochujang, and 1 tbsp honey. Add pork and toss to coat. Let marinate for 15 minutes.

    While pork marinates, cut the 1 red bell pepper and 1 red onion into 1-inch pieces. Slice the 1 cucumber into thick rounds.

    Thread pork, bell pepper, and onion onto skewers, alternating. Reserve any extra marinade.

    Preheat grill or broiler to medium-high. Cook skewers for 10-12 minutes, turning occasionally, until pork is browned and cooked through (internal temp 145°F).

    Brush skewers with reserved marinade during the last 2 minutes of cooking. Sprinkle with 1 tbsp sesame seeds and serve with cucumber slices.
