Ingredients

  • 4 cups chicken or pork broth
  • 6 oz ground pork
  • 7 oz fresh ramen noodles
  • 2 tbsp chili oil (or sriracha mixed with oil)
  • 1.5 tbsp soy sauce
  • 1 tbsp mirin
  • 2 whole eggs
  • 2 tbsp scallions (chopped)

Instructions

    Bring broth to boil in a pot. Add ground pork, breaking it up with a spoon, until no pink remains, 4 minutes.

    Stir in chili oil, soy sauce, and mirin until fragrant, 1 minute.

    Add noodles and stir to separate. Simmer until tender, 3 minutes.

    Crack eggs into the simmering broth. Poach until whites set but yolks still jiggle, 3 minutes.

    Ladle into bowls, dividing pork and noodles evenly. Top with scallions and extra chili oil.
