Spicy Korean Ramen

A quick and satisfying spicy ramen loaded with tender noodles, crisp carrots, sweet peas, and a crunchy potato chip topping. This Korean-inspired dish comes together in minutes and is perfect for a weeknight dinner.

Ingredients

  • 2 packages ramen noodles
  • 2 tablespoons gochujang
  • 1 tablespoon soy sauce
  • 1 medium carrot
  • ½ cup frozen peas
  • 2 stalks green onions
  • 1 cup potato chips

    Cook the 2 packages ramen noodles according to package directions, but drain them 1 minute before the suggested time so they stay slightly firm. Reserve 1/4 cup of the cooking water.

    While the noodles cook, peel and julienne the 1 medium carrot into thin matchsticks. Slice the 2 green onions thinly, separating white and green parts.

    In a small bowl, mix the 2 tbsp gochujang, 1 tbsp soy sauce, and 2 tbsp of the reserved noodle water to make a smooth sauce.

    Heat a large skillet over medium-high heat. Add the carrot and white parts of the green onions, stir-frying until the carrot is slightly tender but still crisp, about 2 minutes.

    Add the drained noodles, the sauce, and the 1/2 cup frozen peas to the skillet. Toss everything together over medium heat until the noodles are well coated and the peas are heated through, about 2 minutes. If it looks dry, add a splash more noodle water.

    Remove from heat and stir in the green parts of the green onions. Serve immediately, topping each bowl with the 1 cup potato chips crushed lightly in your hand for crunch.
