Ingredients
- 1 whole (about 1.5 lbs) smoked ham hock
- 1 large bunch (about 1 lb), chopped collard greens, fresh
- 2 tbsp hot sauce (Frank's RedHot or similar)
- 1 tbsp white vinegar
- ¾ cup chicken broth
- ½ large yellow onion, sliced

Heat oil in a large skillet over medium-high until it shimmers, about 60 seconds.

Sear ham hock 3-4 minutes per side until edges brown. Don't move it around.

Add onion slices to the pan, stirring around the ham hock, for 2 minutes until fragrant.

Pour in broth, hot sauce, and vinegar. Add collard greens in handfuls, pressing down to fit.

Cover and simmer 10 minutes until greens are tender and liquid is mostly absorbed.

Taste and season with salt and pepper. Serve hot straight from the skillet.
