Ingredients

  • 1 lb chicken breast, diced into bite-sized pieces
  • 3 tbsp gochujang (Korean red chili paste)
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 2 cups cooked white or brown rice
  • 2 whole eggs
  • ½ sheet nori sheets (optional, for garnish)

Instructions

    Whisk gochujang, honey, soy sauce, and 2 tbsp water in a small bowl until smooth.

    Heat 1 tbsp oil in a large skillet over medium-high until shimmering, ~90 seconds.

    Add chicken and cook, stirring often, until edges turn golden and no pink remains, ~7 minutes.

    Pour in gochujang glaze, stir to coat, and cook for 2 minutes until sauce clings to chicken.

    Push chicken to the side, crack eggs into the pan, cover, and cook 2–3 minutes until whites set but yolks jiggle.

    Divide rice between two bowls, top with glazed chicken and a soft egg, tear nori on top, and serve hot.
