Ingredients
- ¾ lb beef sirloin or flank steak
- 2 tsp cumin seeds (or ground cumin)
- 2 tbsp chili crisp (like Lao Gan Ma)
- 4 stalks scallions
- 4 cloves garlic
- 1 tbsp sesame oil

Slice the beef against the grain into 1/4-inch-thick strips. Toss with 1 tsp cumin, salt, and pepper.

Heat a 12-inch skillet over medium-high until it's very hot, about 90 seconds. Working in batches, sear the beef 45 seconds per side without stirring — edges should look charred.

Push beef to the side. Add minced garlic and remaining 1 tsp cumin to the pan; cook 30 seconds until fragrant.

Toss beef with garlic and cumin. Add chili crisp and sliced scallion whites, stirring constantly for 45 seconds.
