Ingredients
- 1 lb calamari (cleaned, bodies and tentacles)
- 2 tbsp olive oil
- 3 cloves garlic
- ½ tsp red chili flakes
- 2 cups canned crushed tomatoes
- ¼ cup fresh basil leaves
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- 1
Heat the 2 tbsp olive oil in a large skillet over medium heat. Add the 3 minced garlic cloves and 0.5 tsp red chili flakes, cooking until fragrant, about 1 minute.
- 2
Pour in the 2 cups crushed tomatoes, 0.5 tsp salt, and 0.25 tsp black pepper. Stir and bring to a simmer, then reduce heat to low and cook for 10 minutes, until slightly thickened.
- 3
Add the 1 lb calamari to the sauce, stirring to coat. Simmer gently for 5-7 minutes, until the calamari is opaque and tender—do not overcook or it will become rubbery.
- 4
Tear the 0.25 cup basil leaves and stir them into the sauce. Cook for 1 more minute, just until wilted.
- 5
Taste and adjust seasoning with more salt or chili flakes if desired. Serve hot over pasta, polenta, or with crusty bread.
