Spicy Bibim Guksu

Korean cold noodle bowl with a fiery gochujang-sesame sauce, fresh vegetables, and crispy fried onions. Ready in 20 minutes and endlessly customizable.

Ingredients

  • 6 oz thin wheat noodles (guksu or ramen)
  • 2.5 tbsp gochujang (Korean red chili paste)
  • 1.5 tbsp sesame oil
  • 1 medium cucumber
  • 1 medium carrot
  • 2 large egg
  • ¼ cup crispy fried onions (or panko)

Instructions

    Boil noodles in salted water until al dente, about 4 minutes. Drain, rinse under cold water, and set aside.

    Whisk gochujang, sesame oil, 2 tbsp cold water, 1 tbsp soy sauce, 1 tsp sugar, and 1 minced garlic clove into a smooth sauce.

    Julienne cucumber and carrot into thin matchsticks (or use a mandoline). Fry eggs sunny-side up in a separate skillet.

    Divide noodles between two bowls. Top each with cucumber, carrot, and a fried egg. Drizzle the sauce generously over top.

    Scatter crispy fried onions and 1 tbsp toasted sesame seeds over each bowl. Mix vigorously before eating.
