Ingredients
- 6 oz thin wheat noodles (guksu or ramen)
- 2.5 tbsp gochujang (Korean red chili paste)
- 1.5 tbsp sesame oil
- 1 medium cucumber
- 1 medium carrot
- 2 large egg
- ¼ cup crispy fried onions (or panko)

Boil noodles in salted water until al dente, about 4 minutes. Drain, rinse under cold water, and set aside.

Whisk gochujang, sesame oil, 2 tbsp cold water, 1 tbsp soy sauce, 1 tsp sugar, and 1 minced garlic clove into a smooth sauce.

Julienne cucumber and carrot into thin matchsticks (or use a mandoline). Fry eggs sunny-side up in a separate skillet.

Divide noodles between two bowls. Top each with cucumber, carrot, and a fried egg. Drizzle the sauce generously over top.

Scatter crispy fried onions and 1 tbsp toasted sesame seeds over each bowl. Mix vigorously before eating.
