Ingredients
- 1.5 lbs beef sirloin or chuck, cut into 1-inch cubes
- 1 large yellow onion, sliced into 1/4-inch rings
- 1 tbsp fresh ginger, minced
- 2 tsp berbere spice blend
- 1 whole jalapeño, sliced thin (seeds removed for mild heat)
- 2 tbsp fresh lime juice
- ¼ cup fresh cilantro or parsley, chopped

Heat 2 tbsp oil in a large skillet over high heat until it shimmers, about 1 minute.

Working in batches, sear beef cubes without stirring for 2 minutes per side until deeply browned. Transfer to a plate.

Add onion to the same skillet, stir often, until caramelized and tender, about 6 minutes.

Stir in ginger, berbere, and jalapeño. Cook for 1 minute until fragrant.

Return beef to the skillet with any juices, add 1/4 cup water, and simmer for 3 minutes.
