Ingredients
- 1 lb beef sirloin, thinly sliced
- 3 shallots, sliced
- 1 onion, sliced
- 2 tbsp chili paste (sambal oelek or similar)
- 3 tbsp vegetable oil
- ½ tsp salt
- 1 lime wedges, for serving

Pat the 1 lb beef dry with paper towels and season with 0.5 tsp salt. Heat 2 tbsp vegetable oil in a large skillet over high heat until shimmering.

Add the beef in a single layer (work in batches if needed) and sear without moving until browned and crispy on one side, about 3-4 minutes. Flip and cook 2 minutes more. Transfer to a plate.

Reduce heat to medium and add the remaining 1 tbsp oil. Add the 3 sliced shallots and 1 sliced onion; cook, stirring, until softened and golden, about 5-7 minutes.

Stir in the 2 tbsp chili paste and cook until fragrant, about 1 minute. Return the beef to the skillet and toss to coat everything in the chili mixture.

Cook for 1-2 minutes until the beef is heated through and the sauce clings to the meat. Serve hot with lime wedges to squeeze over.
