Ingredients
- 1.5 lbs beef hot links (or smoked sausage)
- 1 medium yellow onion, sliced
- 1 large bell pepper (red or green), sliced
- ¼ cup chili sauce (Frank's RedHot or Sriracha)
- 1 tbsp white vinegar
- 4 whole hot dog buns
- ½ cup jalapeños, sliced (optional)

Heat a large skillet over medium-high. Slice the hot links on a bias into 2-inch segments.

Sear the sausage pieces 2–3 minutes per side until charred and edges curl. Transfer to a plate.

Add onion and bell pepper to the same skillet. Sauté 4 minutes, stirring once, until edges soften.

Return sausage to the skillet. Stir in chili sauce and vinegar. Cook 1 minute until everything coats.

Toast buns in the skillet 30 seconds per side until golden, working in batches if needed.

Pile sausage and peppers into buns. Top with jalapeños if desired. Serve immediately.
