Ingredients

  • 1.5 lb boneless, skinless chicken thighs
  • 3 whole canned chipotle peppers in adobo sauce
  • 2 tbsp tomato paste
  • 2 tbsp lime juice
  • ¾ cup chicken broth
  • 1 tsp cumin

Instructions

    Pat chicken dry and season generously with salt and pepper on both sides.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 1 minute.

    Sear chicken 3 minutes per side without moving until golden brown. Transfer to a plate.

    Blend chipotles, tomato paste, lime juice, broth, and cumin in a blender until smooth.

    Pour adobo sauce into the skillet, return chicken to the pan, and simmer 8 minutes until cooked through.
