Ingredients

  • 1.5 lbs pork shoulder, cut into 1-inch cubes
  • 1 tbsp smoked paprika
  • 1 tsp ground cumin
  • 4 count garlic cloves, minced
  • 3 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 count lemon, cut into wedges

Instructions

    Combine pork, paprika, cumin, garlic, olive oil, vinegar, and salt in a bowl. Toss until coated, then let sit 5 minutes.

    Thread pork onto skewers (or metal picks), leaving a 1/4-inch gap between pieces for even cooking.

    Heat a grill pan or heavy skillet over medium-high until smoking, about 2 minutes.

    Lay skewers on the pan without moving for 3 minutes until edges char deeply and a golden crust forms.

    Rotate skewers and cook another 2–3 minutes until the pork is cooked through but still juicy inside.

    Transfer to a plate and squeeze lemon over the top. Serve immediately.
