Spiced Poha Breakfast Bowl

Ingredients
- 2 cups poha (flattened rice)
- ½ cup boiling water
- 1 medium potato, diced small
- 2 tbsp olive oil
- ½ tsp mustard seeds
- 8 leaves curry leaves
- ¼ cup roasted unsalted peanuts, chopped
- 1 tbsp fresh lime juice
- 1 salt and black pepper to taste

Rinse poha under cold water briefly until each grain separates; drain well.

Soak poha in boiling water for 2 minutes until tender but still hold their shape.

Drain poha thoroughly in a fine-mesh sieve, pressing gently to remove excess water.

Heat oil in a large skillet over medium-high until it shimmers, ~90 seconds.

Add mustard seeds and curry leaves. Listen for the seeds to pop, ~30 seconds.

Add diced potato and stir constantly until edges turn golden, ~5 minutes.

Add drained poha and peanuts. Toss gently for 2 minutes until warm and combined.

Drizzle with lime juice and season with salt and pepper to taste. Toss once.

Divide between two bowls and serve warm. Top with extra lime wedge if desired.
