Ingredients

  • ½ lb ground lamb
  • 2 tbsp ginger-garlic paste
  • 1.5 tsp garam masala
  • ¾ tsp chili powder
  • ¼ cup fresh cilantro, finely chopped
  • 1 tbsp lemon juice

Instructions

  1. 1

Combine lamb, ginger-garlic paste, garam masala, chili powder, cilantro, lemon juice, and salt in a bowl. Mix until just combined.

  2. 2

Divide mixture into 4 equal portions. Mold each onto a metal skewer, pressing firmly into an elongated log about 4 inches long.

  3. 3

Heat oil in a large skillet over medium-high heat until shimmering, about 60 seconds.

  4. 4

Add skewers to skillet without moving them for 3 minutes until the bottoms are golden brown.

  5. 5

Rotate each skewer and cook 2–3 minutes more until cooked through and browned on all sides.

  6. 6

Slide kebabs onto a plate. Serve with lemon wedges and mint chutney.
