Ingredients
- 1 lb ground lamb
- 1 tbsp coriander seeds, toasted and crushed
- 1 whole cinnamon stick, finely ground (or 1/4 tsp ground cinnamon)
- ½ medium yellow onion, minced
- ¾ cup plain Greek yogurt
- 1 whole lemon
- ¼ cup fresh herbs (parsley, dill, or mint, chopped)

Mix ground lamb, crushed coriander, ground cinnamon, minced onion, salt, and pepper in a bowl until just combined.

Divide mixture into 8 portions and mold onto skewers, pressing gently to compact.

Heat a grill or grill pan over medium-high until smoking, about 2 minutes.

Grill kofta 2–3 minutes per side without moving until charred and cooked through.

Stir yogurt with half the lemon juice, salt, and pepper. Top kofta with herbs and serve with yogurt sauce.
