Ingredients

  • 1 lb ground lamb
  • 1 medium, thinly sliced red onion
  • 3 whole green chilies
  • ¾ cup Greek yogurt
  • 1.5 tsp cumin
  • 1 tsp coriander
  • ½ tsp sumac
  • 1 whole lemon

Instructions

    Mix ground lamb with cumin, coriander, sumac, 0.5 tsp salt, and a pinch of black pepper until evenly combined.

    Divide mixture into 4 equal portions and shape each into an oval patty, ~2 inches thick.

    Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, ~1 minute.

    Sear kababs 3 minutes per side without moving — edges should char and crisp.

    Push kababs to the side and sear green chilies until charred, ~2 minutes total.

    Stir yogurt with 0.25 tsp salt and juice from half the lemon. Serve kababs with yogurt, raw red onions, charred chilies, and lemon wedges.
