Ingredients

  • 1.5 lb chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1.5 cups long-grain white rice
  • 3 cups chicken broth
  • 1 medium onion, finely diced
  • ½ tsp ground allspice
  • ¼ tsp ground cinnamon
  • 2 whole limes, cut into wedges

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 1 minute.

    Add chicken and cook, stirring occasionally, until the outside is opaque, about 5 minutes.

    Stir in diced onion, allspice, and cinnamon; cook until fragrant, about 1 minute.

    Add rice and stir for 1 minute, then pour in broth and bring to a simmer.

    Reduce heat to medium-low, cover, and cook until rice is tender and liquid is absorbed, 12–14 minutes.
