Ingredients
- 1 can spam (12 oz can)
- 3 cups cooked jasmine rice (day-old, chilled)
- 1.5 cups fresh pineapple chunks
- 2 large eggs
- 3 tbsp soy sauce
- 3 tbsp chili fish sauce (nam pla prik)
- 1 medium cucumber
- 1 cup cherry tomatoes
- 3 stalks green onions

Slice spam into 1/4-inch cubes. Heat a large skillet over medium-high heat and cook spam until edges crisp, ~5 minutes, stirring occasionally.

Push spam to the side. Pour beaten eggs into the empty space and scramble until just set, ~2 minutes, then toss together with the spam.
