Ingredients

  • 1 can (12 oz) Spam, canned
  • 3 cups cooked rice, chilled
  • 3 large eggs
  • 1 small, diced onion
  • 2 cloves garlic cloves, minced
  • 2 tbsp soy sauce
  • ¾ cup frozen peas
  • ½ tsp sesame oil

Instructions

    Slice Spam into 1/4-inch-thick rounds, then cut each round into small cubes.

    Whisk eggs in a bowl with a pinch of salt and black pepper.

    Heat 1 tbsp olive oil in a 12-inch skillet over medium-high until shimmering.

    Add Spam cubes and cook, stirring occasionally, until edges brown, ~4 minutes.

    Push Spam to the side, pour eggs into empty space, and scramble until set, ~2 minutes.

    Add onion and cook, stirring, until softened, ~2 minutes.

    Stir in garlic and cook until fragrant, ~30 seconds.

    Add chilled rice, breaking up clumps, and stir-fry for 2 minutes.

    Stir in peas and soy sauce, tossing to coat evenly, ~1 minute.

    Drizzle sesame oil over the top and toss. Serve immediately.
