Ingredients
- 8 oz spaghetti
- 1.5 cups cherry tomatoes
- ½ cup Parmesan cheese
- 2 tbsp olive oil
- 2 cloves garlic
- ¼ cup fresh basil
Instructions
- 1
Bring a large pot of salted water to a boil. Add the 8 oz spaghetti and cook until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water before draining.
- 2
While pasta cooks, heat 2 tbsp olive oil in a large skillet over medium heat. Add 2 minced garlic cloves and cook until fragrant, about 1 minute.
- 3
Add 1.5 cups halved cherry tomatoes to the skillet. Cook, stirring occasionally, until tomatoes soften and release their juices, about 5-7 minutes.
- 4
Add the drained spaghetti to the skillet with the tomatoes. Toss to combine, adding reserved pasta water a splash at a time if needed to create a light sauce.
- 5
Remove from heat and stir in 1/2 cup grated Parmesan and 1/4 cup chopped fresh basil. Season with salt and black pepper to taste. Serve immediately with extra Parmesan on top.
