Ingredients

  • 8 oz squid tendon, cleaned and sliced into 1/4-inch rings
  • 6 oz large sea scallops, patted dry
  • 3 tbsp soy sauce
  • 2 tbsp mirin (or 1 tbsp honey mixed with 1 tbsp water)
  • 1 tbsp butter
  • 2 clove garlic cloves, minced
  • 2 stalk scallions, sliced thin (white and green parts separated)

Instructions

    Heat 1 tbsp neutral oil in a 12-inch skillet over high heat until it shimmers, ~90 seconds.

    Add squid tendon. Sear 2 minutes without stirring — surface should look lightly browned.

    Push tendon to the side. Add scallops to the empty space. Sear 90 seconds per side without moving.

    Add garlic and white parts of scallions. Stir constantly for 30 seconds until fragrant.

    Pour soy sauce and mirin over everything. Add butter. Toss gently for 30 seconds until glaze coats all.

    Transfer to a bowl. Garnish with green scallion parts and serve immediately.
