Soy Butter Pork Wraps

Ingredients

  • 1.5 lbs pork belly or pork shoulder, sliced 1/4-inch thick
  • 3 tbsp soy sauce
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 2 tbsp rice vinegar
  • 1 cup radish, thinly sliced
  • 12 leaves butter lettuce or napa cabbage leaves
  • ½ cup fresh cilantro and scallions, chopped

Instructions

    Toss radish with rice vinegar and a pinch of salt. Let sit while you cook.

    Bring salted water to a boil in a large skillet or wide pot. Add pork slices, cover, and simmer for 8 minutes until just cooked through.

    Drain pork. Pat dry with paper towels.

    Return skillet to high heat with butter. Once foaming, add pork in a single layer. Cook 2 minutes per side until edges brown.

    Push pork to the side. Add minced garlic to the pan, cook 30 seconds until fragrant, then stir in soy sauce. Toss pork to coat.

    Lay lettuce on a platter, top with pork, pickled radish, and herbs. Serve immediately.
