Ingredients
- 1.5 lbs pork belly or pork shoulder, sliced 1/4-inch thick
- 3 tbsp soy sauce
- 2 tbsp butter
- 4 cloves garlic, minced
- 2 tbsp rice vinegar
- 1 cup radish, thinly sliced
- 12 leaves butter lettuce or napa cabbage leaves
- ½ cup fresh cilantro and scallions, chopped

Toss radish with rice vinegar and a pinch of salt. Let sit while you cook.

Bring salted water to a boil in a large skillet or wide pot. Add pork slices, cover, and simmer for 8 minutes until just cooked through.

Drain pork. Pat dry with paper towels.

Return skillet to high heat with butter. Once foaming, add pork in a single layer. Cook 2 minutes per side until edges brown.
