Ingredients

  • 1 crust unbaked 9-inch pie crust
  • 3 whole large tomatoes, sliced 1/4-inch thick
  • 1 to taste salt and black pepper
  • ¾ cup mayonnaise
  • 1 cup sharp cheddar cheese, shredded
  • 2 tbsp fresh basil, chopped
  • 1 tbsp olive oil

    Preheat oven to 375°F. Place pie crust in a 9-inch pie dish.

    Pat tomato slices dry with paper towels. Season both sides generously with salt and pepper.

    Stir together mayo, cheddar, and basil in a bowl until combined.

    Spread half the mayo-cheese mixture over the pie crust in an even layer.

    Arrange tomato slices in overlapping rows over the cheese layer.

    Dollop remaining mayo-cheese mixture over tomatoes. Drizzle lightly with olive oil.
