  • ¼ cup sugar
  • 1 tablespoon salt
  • 1 medium yellow onion
  • 1 tablespoon fresh dill or mustard seed

    Place each tomato on a cutting board with the stem end facing away from you, then slice straight down through the center into 1/4-inch-thick slices, like cutting bread rounds.

    Peel the onion, then slice it lengthwise from the root to the tip into thin half-moon shapes, about 1/8-inch thick.

    Pour the vinegar, sugar, and salt into a medium saucepan and set it over medium-high heat, stirring once, until small bubbles form around the edges and steam rises—about 3 minutes.
