Ingredients

  • 2 lbs green tomatoes, cored
  • 1.5 cups white vinegar
  • ½ cup water
  • 3 tbsp sugar
  • 1.5 tbsp salt
  • 1 tbsp mustard seeds
  • ½ tsp red pepper flakes

Instructions

    Slice green tomatoes into 1/4-inch-thick rounds. Discard the cores.

    Layer tomato slices in a large mason jar or glass container.

    Combine vinegar, water, sugar, and salt in a saucepan over medium-high heat.

    Stir until sugar and salt dissolve, about 2 minutes. The mixture should steam.

    Add mustard seeds and red pepper flakes. Simmer 1 minute until fragrant.

    Pour brine over tomatoes, covering them completely. Let cool 15 minutes.

    Cover and refrigerate at least 4 hours before serving. Best after 24 hours.
