Ingredients
- 2 lbs green tomatoes, cored
- 1.5 cups white vinegar
- ½ cup water
- 3 tbsp sugar
- 1.5 tbsp salt
- 1 tbsp mustard seeds
- ½ tsp red pepper flakes

Slice green tomatoes into 1/4-inch-thick rounds. Discard the cores.

Combine vinegar, water, sugar, and salt in a saucepan over medium-high heat.

Stir until sugar and salt dissolve, about 2 minutes. The mixture should steam.
