Ingredients
- 6 medium fresh peaches, pitted and sliced
- ¾ cup sugar, divided
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- 1.5 cups all-purpose flour
- 6 tbsp butter, cold and cubed
- 1.5 tsp baking powder

Preheat oven to 375°F. Toss peaches with 0.5 cup sugar, vanilla, and cinnamon in a bowl.

In another bowl, whisk together flour, baking powder, and 0.25 cup sugar. Cut in cold butter until mixture looks like coarse crumbs.

Pour peach mixture into an 8x8-inch or 9x9-inch baking dish. Spread evenly.

Drop biscuit topping by spoonfuls over peaches; cover most but not all of the surface.

Bake until biscuit is golden brown and fruit bubbles at the edges, 25–30 minutes.

Cool 10 minutes before serving. The cobbler will set slightly as it cools.
