Ingredients

  • 2 chops pork chops (bone-in or boneless, 1 inch thick)
  • ½ cup all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 large eggs
  • ¼ cup buttermilk
  • 2 tbsp vegetable oil (for frying)

Instructions

    Pat pork chops dry with paper towels on both sides.

    Mix flour, salt, and pepper on a shallow plate.

    Whisk eggs and buttermilk together in a shallow bowl.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Dredge a pork chop in flour, tap off excess, dip in egg mixture, then coat in flour again.
