Ingredients

  • 1.5 cups all-purpose flour
  • ¾ cup sugar
  • 4 tbsp apricot jam
  • 1 large egg
  • 1 tsp baking soda
  • ½ cup butter, divided
  • 1 cup heavy cream

Instructions

    Preheat oven to 350°F. Butter a 9-inch square baking dish.

    Mix flour, sugar, apricot jam, egg, baking soda, and 2 tbsp butter in a bowl until just combined.

    Spread batter evenly into the prepared dish.

    Bake for 20 minutes, until a toothpick inserted in the center comes out with a few crumbs.

    While pudding bakes, heat remaining 6 tbsp butter and cream in a saucepan over medium until bubbling, ~3 minutes.
