South African Gatsby Sandwich

Ingredients

  • 3 whole potatoes, medium
  • ½ lb beef, sliced thin
  • ¼ lb chicken sausage or ham, sliced
  • 1 whole half loaf white bread or baguette
  • ¼ cup mayonnaise
  • 2 tbsp hot sauce or peri-peri sauce
  • 4 tbsp olive oil or vegetable oil for frying

    Cut potatoes into thin matchsticks, about 1/8 inch thick. Soak in cold water for 5 minutes, then pat dry completely.

    Mix mayonnaise and hot sauce in a small bowl until well combined.

    Heat oil in a large skillet over medium-high. Add potato matchsticks in a single layer and fry until golden and crispy, stirring once halfway, about 8 minutes.

    Transfer potatoes to a plate lined with paper towels. Sprinkle with salt and pepper.

    In the same skillet, sear beef slices 60 seconds per side without moving—they should be caramelized at the edges. Remove to a plate.

    Add sausage or ham slices to the skillet and warm through, about 2 minutes. Remove to the plate with beef.

    Slice the bread lengthwise. Spread sauce mixture on both halves generously.

    Layer fried potatoes, beef, and sausage inside the bread. Press gently to compress.

    Slice in half and serve immediately while potatoes are still warm and crispy.
