Ingredients
- ¼ cup olive oil
- 4 count garlic cloves, minced
- 2 tbsp fresh thyme
- 3 tbsp balsamic vinegar
- 1 tbsp Worcestershire sauce
- 1 tsp black pepper
- 1 tsp sea salt
- 4 count (200g each) beef sirloin or ribeye steaks
- 4 count beef boerewors sausages
- 2 count onions, halved
- 2 count bell peppers, quartered
- 2 count maize cobs
- 2 count lemon wedges
- 2 cups (cooked) pap or maize meal
- 1 cup chakalaka (spicy vegetable relish)
- 0 to taste salt and pepper to taste
Instructions
- 1
Combine olive oil, minced garlic, fresh thyme, balsamic vinegar, Worcestershire sauce, black pepper, and salt in a bowl to make the marinade.
- 2
Pat the beef steaks dry with paper towels and season generously with the marinade. Let sit for 20 minutes at room temperature.
- 3
Prepare the braai by arranging charcoal or wood in a mound and light it. Allow flames to die down until you have hot coals with moderate heat (about 30 minutes).
- 4
Place the grill grate 10-15cm above the coals. Once ready, place steaks directly on the grate and cook for 4-5 minutes per side for medium-rare, pressing gently for even contact.
- 5
Add boerewors sausages to the grill alongside the steaks during the last 8-10 minutes of cooking, turning occasionally until browned and cooked through.
- 6
Grill the onion halves, bell pepper quarters, and maize cobs for 3-4 minutes per side until charred and tender.
- 7
Transfer all cooked items to a clean platter and rest for 3-5 minutes before serving.
- 8
Arrange the grilled beef, sausages, and vegetables on a large serving platter with lemon wedges.
- 9
Serve with warm pap, chakalaka relish, and additional seasoning on the side. Enjoy with local South African beer if desired.
