Ingredients
- 2 large eggs
- ¼ cup whole milk
- 4 slices, 0.75-inch thick sourdough bread
- 2 tablespoons butter
- ¼ teaspoon cinnamon
- 1 pinch each salt and pepper

Crack the 2 eggs into a shallow bowl or pie dish and pour in 0.25 cup milk.

Add 0.25 teaspoon cinnamon and a pinch each of salt and pepper to the egg mixture.

Whisk the eggs, milk, and spices together with a fork until the mixture is uniform and pale, about 15–20 whisks.

Place a 12-inch nonstick skillet or cast iron skillet over medium-high heat and add 1 tablespoon butter.

Wait until the butter foams and stops sizzling, about 45 seconds, so you know it is hot enough.

Take one slice of sourdough and dunk both sides into the egg mixture for 1 second each side, so the bread absorbs the custard but is not soggy.

Place the soaked slice flat into the hot skillet and cook until the bottom surface turns golden brown, about 2–3 minutes.

Flip the slice carefully with a spatula and cook the other side until golden brown, about 2 minutes more.

Transfer the cooked slice to a plate and repeat steps 6–8 with the remaining 3 slices, adding 0.5 tablespoon butter to the skillet before each new slice.
