Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 cups vegetable oil for frying
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ cup honey

Instructions

  1. 1

In a medium bowl, whisk together 1.5 cups flour, 1.5 teaspoons baking powder, and 0.25 teaspoon salt until no white streaks of baking powder remain.

  2. 2

Pour 0.75 cup warm water slowly into the flour mixture while stirring with a wooden spoon until a soft, slightly sticky dough forms, about 1 minute.

  3. 3

Turn the dough out onto a clean counter dusted with flour and knead it gently for 30 seconds — press it down, fold it in half, and repeat until it feels smooth and holds together.

  4. 4

In a small bowl, stir 0.25 cup sugar and 1 teaspoon cinnamon together until uniform, then set it on the counter near your work area.

  5. 5

Pour 2 cups vegetable oil into a large, deep saucepan or Dutch oven and heat over medium-high heat until the oil shimmers and a wooden spoon dipped in briefly releases small bubbles, about 4 minutes.

  6. 6

While oil heats, divide the dough into 8 equal pieces and roll each piece into a ball between your palms, pressing gently so no cracks appear.

  7. 7

Pat each dough ball into a thin circle about 3 inches across and 0.25 inch thick using your fingertips — the circle does not need to be perfect.

  8. 8

Carefully place one flattened dough circle into the hot oil and fry for 60 seconds, watching until the bottom side turns the color of light honey and bubbles form around the edges.

  9. 9

Flip the sopapilla over with a slotted spoon or tongs and fry the second side for 45 seconds until it matches the golden color of the first side, then lift it out onto a clean plate.

  10. 10

Repeat steps 8 and 9 with the remaining 7 dough circles, allowing the oil to return to a shimmer between batches — this takes about 30 seconds each time.

  11. 11

While each sopapilla is still warm, use a small spoon or your fingers to sprinkle the cinnamon-sugar mixture evenly over both sides until lightly coated.

  12. 12

Arrange the sopapillas on a serving platter, then warm 0.5 cup honey in a small saucepan over low heat for 30 seconds until it flows easily.

  13. 13

Drizzle the warm honey generously over each sopapilla, or serve the honey in a small bowl for dipping, and serve immediately while warm.
