Ingredients

  • ¾ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 whole large egg
  • 1 teaspoon vanilla extract
  • 1.75 cups all-purpose flour
  • ¼ teaspoon baking soda
  • 2 tablespoons coarse sugar for topping

Instructions

    Preheat oven to 350°F.

    In a small bowl, whisk together flour and baking soda.

    Line two baking sheets with parchment paper.

    In a large bowl, beat softened butter and sugar until fluffy.

    Add egg to the bowl and beat well.

    Add vanilla extract and stir to combine.

    Gradually add flour mixture to wet ingredients.

    Stir until dough just comes together.

    Roll dough into 1-inch balls with your hands.

    Place balls 2 inches apart on prepared baking sheets.

    Gently flatten each ball with the bottom of a glass.

    Sprinkle coarse sugar on top of each cookie.

    Bake for 10–12 minutes until edges are just set.

    Remove from oven and cool on baking sheets for 5 minutes.

    Transfer cookies to a wire rack to cool completely.
