Ingredients

  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 whole large egg
  • 1.5 cups all-purpose flour
  • ½ tsp cream of tartar
  • 2.5 tsp ground cinnamon, divided

Instructions

    Preheat oven to 375°F. Mix 3 tbsp sugar with 1 tsp cinnamon in a small bowl; set aside for coating.

    Cream butter and remaining sugar in a large bowl until fluffy, about 2 minutes with a hand mixer.

    Beat in egg until combined. Add flour, cream of tartar, and remaining 1.5 tsp cinnamon; stir until just combined.

    Roll dough into 1-inch balls. Roll each in the cinnamon-sugar mixture; space 2 inches apart on a sheet pan.

    Bake until edges are set but centers still look slightly underbaked, 9–11 minutes.

    Cool on pan for 5 minutes, then transfer to a wire rack. They'll continue to soften as they cool.
